Ingredients

  • 1 cup shredded purple cabbage
  • 1 cup julienned carrots
  • 1 cup thinly sliced bell peppers (assorted colors)
  • 1 cup bean sprouts
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup fried shallots
  • 1/4 cup shredded coconut, toasted
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon finely chopped red chili (optional)

Instructions

  1. In a large bowl, combine the shredded purple cabbage, julienned carrots, sliced bell peppers, and bean sprouts.
  2. Add the chopped cilantro, mint leaves, roasted peanuts, fried shallots, and toasted shredded coconut to the bowl.
  3. In a small bowl, whisk together the fresh lime juice, soy sauce, brown sugar, and finely chopped red chili (if using) to make the dressing.
  4. Pour the dressing over the salad and toss gently to combine all the ingredients.
  5. Transfer the Kerabu Kaleidoscope to a serving platter and serve immediately.
