Ingredients
- 1 cup shredded purple cabbage
- 1 cup julienned carrots
- 1 cup thinly sliced bell peppers (assorted colors)
- 1 cup bean sprouts
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup chopped roasted peanuts
- 1/4 cup fried shallots
- 1/4 cup shredded coconut, toasted
- 1/4 cup fresh lime juice
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon finely chopped red chili (optional)
Instructions
- In a large bowl, combine the shredded purple cabbage, julienned carrots, sliced bell peppers, and bean sprouts.
- Add the chopped cilantro, mint leaves, roasted peanuts, fried shallots, and toasted shredded coconut to the bowl.
- In a small bowl, whisk together the fresh lime juice, soy sauce, brown sugar, and finely chopped red chili (if using) to make the dressing.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
