Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 1 inch ginger, grated
- 4 garlic cloves, minced
- 2 green chilies, slit
- 1 sprig curry leaves
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1 cup coconut milk
- Salt to taste
- 2 tbsp coconut oil
Instructions
- Heat coconut oil in a large pot and sauté the onions, ginger, garlic, green chilies, and curry leaves until the onions are golden brown.
- Add the tomatoes and cook until they turn mushy.
- Add the turmeric powder, red chili powder, coriander powder, and garam masala. Cook for a few minutes.
- Add the chicken pieces and mix well with the masala. Cook for 5 minutes.
- Pour in the coconut milk and season with salt. Cover and simmer for 45 minutes or until the chicken is cooked through.
- Garnish with fresh curry leaves and serve hot with steamed rice or bread.
