Keralan Chicken Stew

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 1 inch ginger, grated
  • 4 garlic cloves, minced
  • 2 green chilies, slit
  • 1 sprig curry leaves
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1 cup coconut milk
  • Salt to taste
  • 2 tbsp coconut oil

Instructions

  1. Heat coconut oil in a large pot and sauté the onions, ginger, garlic, green chilies, and curry leaves until the onions are golden brown.
  2. Add the tomatoes and cook until they turn mushy.
  3. Add the turmeric powder, red chili powder, coriander powder, and garam masala. Cook for a few minutes.
  4. Add the chicken pieces and mix well with the masala. Cook for 5 minutes.
  5. Pour in the coconut milk and season with salt. Cover and simmer for 45 minutes or until the chicken is cooked through.
  6. Garnish with fresh curry leaves and serve hot with steamed rice or bread.
