Ingredients
- 2 lbs fresh clams, cleaned
- 4 cloves garlic, minced
- 4 shallots, finely chopped
- 3 red chilies, sliced
- 2 tomatoes, diced
- 1 lemongrass stalk, bruised
- 1 inch galangal, sliced
- 3 kaffir lime leaves
- 1/4 cup lime juice
- Salt to taste
- Sugar to taste
- 2 tablespoons cooking oil
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix together garlic, shallots, red chilies, tomatoes, lemongrass, galangal, kaffir lime leaves, lime juice, salt, and sugar to make the spicy lime sauce.
- Heat the cooking oil in a pan over medium heat and sauté the spicy lime sauce until fragrant.
- Add the cleaned clams to the pan and cook for 3-4 minutes until they start to open.
- Transfer the clams to the preheated grill and cook for an additional 3-4 minutes, basting with the spicy lime sauce.
- Once the clams are fully cooked and slightly charred, remove from the grill and serve hot.
