Ingredients

  • 2 lbs fresh clams, cleaned
  • 4 cloves garlic, minced
  • 4 shallots, finely chopped
  • 3 red chilies, sliced
  • 2 tomatoes, diced
  • 1 lemongrass stalk, bruised
  • 1 inch galangal, sliced
  • 3 kaffir lime leaves
  • 1/4 cup lime juice
  • Salt to taste
  • Sugar to taste
  • 2 tablespoons cooking oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together garlic, shallots, red chilies, tomatoes, lemongrass, galangal, kaffir lime leaves, lime juice, salt, and sugar to make the spicy lime sauce.
  3. Heat the cooking oil in a pan over medium heat and sauté the spicy lime sauce until fragrant.
  4. Add the cleaned clams to the pan and cook for 3-4 minutes until they start to open.
  5. Transfer the clams to the preheated grill and cook for an additional 3-4 minutes, basting with the spicy lime sauce.
  6. Once the clams are fully cooked and slightly charred, remove from the grill and serve hot.
