Keropok Lekor Fiesta

Ingredients
- 500g fish fillets
- 200g sago flour
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- Ice water
Instructions
- In a food processor, blend the fish fillets until smooth.
- Transfer the fish paste to a large bowl and add sago flour, minced garlic, salt, and white pepper. Mix well.
- Add ice water gradually and mix until the mixture becomes a thick paste.
- Shape the mixture into small cylindrical shapes and set aside.
- Heat oil in a deep fryer or large pot to 180°C (350°F).
- Fry the shaped fish mixture in batches until golden brown and crispy, about 5-7 minutes.
- Remove the fried keropok lekor and drain on paper towels.
- Serve hot with chili sauce or sweet chili sauce.
