Kesar Pulao (fragrant Saffron Pilaf)

Ingredients
- 2 cups basmati rice
- 1/4 teaspoon saffron threads
- 1/4 cup warm milk
- 2 tablespoons ghee (clarified butter)
- 1 cinnamon stick
- 4 green cardamom pods
- 6 whole cloves
- 1 large onion, thinly sliced
- 1/4 cup mixed nuts (cashews, almonds, raisins)
- Salt to taste
- 3 1/2 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a small bowl, soak the saffron threads in warm milk and set aside.
- Heat ghee in a large pot over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Sauté for a minute until fragrant.
- Add the sliced onion and mixed nuts. Sauté until the onions turn golden brown.
- Add the soaked rice to the pot and sauté for 2-3 minutes.
- Pour in the saffron-infused milk, add salt, and water. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and remove from heat.
- Transfer the Kesar Pulao to a serving dish and garnish with additional saffron threads and nuts if desired.
