Kesar Pulao (fragrant Saffron Rice)

Ingredients

  • 2 cups Basmati rice
  • 4 cups water
  • 1/4 teaspoon saffron threads
  • 2 tablespoons ghee (clarified butter)
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 1/4 cup mixed nuts (cashews, almonds, and raisins)
  • 1 onion, thinly sliced
  • Salt to taste

Instructions

  1. Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
  3. In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and mixed nuts. Sauté until the nuts are golden brown, then remove and set aside.
  4. In the same pot, add the sliced onion and sauté until golden brown.
  5. Add the drained rice to the pot and sauté for 2-3 minutes.
  6. Pour in the water, saffron water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  7. Once done, fluff the rice with a fork and sprinkle the sautéed nuts on top before serving.
