Kesar Pulao (fragrant Saffron Rice)
Kesar Pulao, also known as Fragrant Saffron Rice, is a popular Bangladeshi dish that is both aromatic and flavorful. This dish is perfect for special occasions and gatherings, and it pairs well with a variety of meat and vegetable dishes.
Ingredients
- 2 cups Basmati rice
- 4 cups water
- 1/4 teaspoon saffron threads
- 2 tablespoons ghee (clarified butter)
- 1 cinnamon stick
- 4 green cardamom pods
- 1/4 cup mixed nuts (cashews, almonds, and raisins)
- 1 onion, thinly sliced
- Salt to taste
Instructions
- Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
- In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and mixed nuts. Sauté until the nuts are golden brown, then remove and set aside.
- In the same pot, add the sliced onion and sauté until golden brown.
- Add the drained rice to the pot and sauté for 2-3 minutes.
- Pour in the water, saffron water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Once done, fluff the rice with a fork and sprinkle the sautéed nuts on top before serving.
