Kesar Wala Chawal (fragrant Saffron Rice)

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1/2 teaspoon saffron threads
  • 2 tablespoons ghee (clarified butter)
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 1 teaspoon cumin seeds
  • 1/4 cup mixed nuts (almonds, cashews, raisins)
  • Salt to taste

Instructions

  1. Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
  3. In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and cumin seeds. Sauté for 1-2 minutes until fragrant.
  4. Add the soaked rice to the pot and sauté for 2-3 minutes.
  5. Pour in 4 cups of water, add the saffron water, and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  6. In a separate pan, dry roast the mixed nuts until golden brown and fragrant.
  7. Once the rice is cooked, fluff it with a fork and garnish with the roasted nuts.
