Kesar Wala Chawal (fragrant Saffron Rice)
Kesar Wala Chawal, also known as Fragrant Saffron Rice, is a traditional dish from Saraiki Cuisine that is known for its aromatic flavors and vibrant colors. This dish is perfect for special occasions and celebrations.
Ingredients
- 2 cups basmati rice
- 4 cups water
- 1/2 teaspoon saffron threads
- 2 tablespoons ghee (clarified butter)
- 1 cinnamon stick
- 4 green cardamom pods
- 1 teaspoon cumin seeds
- 1/4 cup mixed nuts (almonds, cashews, raisins)
- Salt to taste
Instructions
- Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
- In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and cumin seeds. Sauté for 1-2 minutes until fragrant.
- Add the soaked rice to the pot and sauté for 2-3 minutes.
- Pour in 4 cups of water, add the saffron water, and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- In a separate pan, dry roast the mixed nuts until golden brown and fragrant.
- Once the rice is cooked, fluff it with a fork and garnish with the roasted nuts.
