Keto Cauliflower Fried Rice

Ingredients

  • 1 head cauliflower, grated
  • 2 tablespoons sesame oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of sesame oil in a large skillet over medium heat.
  2. Add the diced onion, carrots, and peas. Cook until the vegetables are tender.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side.
  4. Scramble the eggs until they are fully cooked, then mix them with the vegetables.
  5. Add the remaining sesame oil and the grated cauliflower to the skillet.
  6. Stir in the soy sauce and cook for 5-7 minutes, until the cauliflower is tender.
  7. Season with salt and pepper, and garnish with chopped green onions before serving.
