Keto Cauliflower Fried Rice
This Keto Cauliflower Fried Rice is a delicious low-carb alternative to traditional fried rice. Packed with flavor and nutrients, it's a perfect dish for those following a ketogenic diet.
Ingredients
- 1 head cauliflower, grated
- 2 tablespoons sesame oil
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup peas
- 2 eggs, beaten
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of sesame oil in a large skillet over medium heat.
- Add the diced onion, carrots, and peas. Cook until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side.
- Scramble the eggs until they are fully cooked, then mix them with the vegetables.
- Add the remaining sesame oil and the grated cauliflower to the skillet.
- Stir in the soy sauce and cook for 5-7 minutes, until the cauliflower is tender.
- Season with salt and pepper, and garnish with chopped green onions before serving.
