Keto Cauliflower Tater Tots

Ingredients

  • 3 cups riced cauliflower
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup almond flour
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • Avocado oil spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, microwave the riced cauliflower for 5-6 minutes, then let it cool.
  3. Place the cooled cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, black pepper, almond flour, egg, and parsley. Mix until well combined.
  5. Form the mixture into small tater tot shapes and place them on the prepared baking sheet.
  6. Spray the tater tots with avocado oil and bake for 20-25 minutes, or until golden and crispy.
  7. Remove from the oven and let cool for a few minutes before serving.
