Keto Cauliflower Tater Tots
These Keto Cauliflower Tater Tots are a delicious low-carb alternative to traditional tater tots. They are crispy on the outside and soft on the inside, making them the perfect snack or side dish for any meal.
Ingredients
- 3 cups riced cauliflower
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup almond flour
- 1 large egg
- 1/4 cup chopped fresh parsley
- Avocado oil spray
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a microwave-safe bowl, microwave the riced cauliflower for 5-6 minutes, then let it cool.
- Place the cooled cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, black pepper, almond flour, egg, and parsley. Mix until well combined.
- Form the mixture into small tater tot shapes and place them on the prepared baking sheet.
- Spray the tater tots with avocado oil and bake for 20-25 minutes, or until golden and crispy.
- Remove from the oven and let cool for a few minutes before serving.
