Keto Cheese Shell Tacos

Ingredients

  • 4 cups shredded cheddar cheese
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup chopped lettuce
  • 1/4 cup sour cream
  • 1/4 cup sliced black olives

Instructions

  1. Preheat a non-stick skillet over medium heat.
  2. Divide the shredded cheddar cheese into 8 piles on the skillet, leaving space between each pile.
  3. Cook the cheese piles for 3-4 minutes until the edges are crispy and the cheese is melted.
  4. Using a spatula, carefully lift each cheese shell and drape it over a taco shell mold or the handle of a wooden spoon to create a taco shell shape. Let it cool and harden.
  5. In the same skillet, cook the ground beef over medium heat until browned. Add the taco seasoning and stir to combine.
  6. Fill each cheese shell with the seasoned ground beef, diced tomatoes, onions, lettuce, sour cream, and black olives.
