Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup almond flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a shallow dish, combine the almond flour, salt, and black pepper. Dredge the chicken breasts in the almond flour mixture, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium and add the chicken broth, lemon juice, and capers to the skillet. Cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
  4. Remove the skillet from the heat and stir in the butter until melted. Return the chicken to the skillet and spoon the sauce over the chicken.
  5. Sprinkle with chopped parsley and serve hot.
