Keto Chicken Piccata
Keto Chicken Piccata is a delicious low-carb Italian dish that's perfect for a healthy dinner. The combination of tender chicken, tangy capers, and a flavorful lemon sauce makes this dish a crowd-pleaser.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup almond flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers
- 2 tablespoons unsalted butter
- 2 tablespoons fresh parsley, chopped
Instructions
- In a shallow dish, combine the almond flour, salt, and black pepper. Dredge the chicken breasts in the almond flour mixture, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium and add the chicken broth, lemon juice, and capers to the skillet. Cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
- Remove the skillet from the heat and stir in the butter until melted. Return the chicken to the skillet and spoon the sauce over the chicken.
- Sprinkle with chopped parsley and serve hot.
