- 1 1/2 cups almond flour
- 1/4 cup sugar-free chocolate chips
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated erythritol
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, erythritol, baking soda, and salt.
- Stir in the melted butter, egg, and vanilla extract until well combined.
- Fold in the sugar-free chocolate chips.
- Scoop the dough onto the prepared baking sheet, and flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
