Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup berbere spice mix
  • 1/4 cup tomato paste
  • 2 cups beef broth
  • 4 slices of injera bread, torn into small pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the ground beef, half of the chopped onions, half of the minced garlic, berbere spice mix, salt, and pepper. Form the mixture into meatballs.
  2. Heat the olive oil in a large pot over medium heat. Add the meatballs and brown on all sides. Remove the meatballs from the pot and set aside.
  3. In the same pot, add the remaining onions and garlic. Cook until softened.
  4. Stir in the tomato paste and cook for 2 minutes.
  5. Pour in the beef broth and bring to a simmer.
  6. Return the meatballs to the pot and simmer for 20 minutes, or until the meatballs are cooked through.
  7. Add the torn injera bread to the pot and stir to combine. Cook for an additional 10 minutes, or until the bread has dissolved and the sauce has thickened.
  8. Adjust the seasoning with salt and pepper, if needed.
