Khachapuri Delight (ხაჭაპური)

Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm milk
  • 1 packet active dry yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 2 eggs
  • 1/4 cup unsalted butter, melted

Instructions

  1. In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour.
  4. Preheat the oven to 500°F (260°C). Divide the dough into 4 equal parts and roll each part into a circle.
  5. In a separate bowl, mix together the mozzarella, feta, and eggs. Place a portion of the cheese mixture in the center of each dough circle and fold the edges to create a boat shape, leaving the cheese exposed in the center.
  6. Brush the exposed cheese and dough edges with melted butter. Bake in the preheated oven for 12-15 minutes, until the crust is golden and the cheese is bubbly.
  7. Serve the Khachapuri hot, allowing each person to mix the melted cheese and butter with the bread using a fork.
