Ingredients
- 1 cup tamarind pulp
- 1 cup pitted dates
- 1 cup jaggery (or brown sugar)
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- 1 teaspoon salt
- 2 cups water
Instructions
- In a saucepan, combine tamarind pulp, dates, jaggery, cumin powder, red chili powder, salt, and water.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally, until the dates soften and the mixture thickens.
- Remove from heat and let it cool.
- Once cooled, blend the mixture into a smooth chutney using a blender or food processor.
- Strain the chutney through a fine mesh sieve to remove any remaining solids.
- Transfer the chutney to a clean, airtight container and refrigerate until ready to serve.
