Khaman Dhokla Pizza Party

Ingredients
- 1 cup gram flour (besan)
- 1/4 cup semolina (sooji)
- 1/2 cup yogurt
- 1/2 teaspoon turmeric powder
- 1 teaspoon ginger-green chili paste
- 1 teaspoon sugar
- Salt to taste
- 1 teaspoon fruit salt
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- 8-10 curry leaves
- 1/4 cup chopped cilantro
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- Assorted pizza toppings (bell peppers, onions, olives, etc.)
Instructions
- In a bowl, mix gram flour, semolina, yogurt, turmeric powder, ginger-green chili paste, sugar, and salt. Add water as needed to make a smooth batter.
- Grease a pizza pan and pour the batter into it. Steam for 12-15 minutes until the dhokla is cooked through. Let it cool.
- Once cooled, cut the dhokla into bite-sized pieces and set aside.
- In a pan, heat oil and add mustard seeds. Once they splutter, add sesame seeds and curry leaves. Pour this tempering over the dhokla pieces.
- Preheat the oven to 400°F (200°C).
- Spread pizza sauce over the tempered dhokla. Sprinkle shredded mozzarella cheese and add your favorite pizza toppings.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped cilantro, and serve hot.
