Khaman Dhokla Sliders

Ingredients

  • 1 cup gram flour (besan)
  • 1/2 cup yogurt
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon ginger-green chili paste
  • 1 tablespoon lemon juice
  • 1 teaspoon eno (fruit salt)
  • 2 tablespoons oil
  • Salt to taste
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • 2-3 green chilies, chopped
  • 1 tablespoon chopped coriander leaves
  • 12 mini burger buns
  • Butter for toasting

Instructions

  1. In a bowl, mix gram flour, yogurt, turmeric powder, ginger-green chili paste, lemon juice, and salt to make a smooth batter.
  2. Add eno fruit salt to the batter and mix well. The batter will become frothy.
  3. Pour the batter into a greased plate and steam for 12-15 minutes until a toothpick inserted comes out clean.
  4. Once steamed, let the dhokla cool and then cut it into small square pieces.
  5. In a small pan, heat oil and add mustard seeds. When the seeds crackle, add sesame seeds, green chilies, and sauté for a few seconds.
  6. Pour this tempering over the cut dhokla pieces and toss gently to coat.
  7. Cut the mini burger buns in half and toast them with a little butter.
  8. Place a piece of tempered dhokla between the toasted buns to make sliders.
  9. Serve the Khaman Dhokla Sliders with green chutney or tamarind chutney.
