Khaman Dhokla Sliders

Ingredients
- 1 cup gram flour (besan)
- 1/2 cup yogurt
- 1/4 teaspoon turmeric powder
- 1 teaspoon ginger-green chili paste
- 1 tablespoon lemon juice
- 1 teaspoon eno (fruit salt)
- 2 tablespoons oil
- Salt to taste
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- 2-3 green chilies, chopped
- 1 tablespoon chopped coriander leaves
- 12 mini burger buns
- Butter for toasting
Instructions
- In a bowl, mix gram flour, yogurt, turmeric powder, ginger-green chili paste, lemon juice, and salt to make a smooth batter.
- Add eno fruit salt to the batter and mix well. The batter will become frothy.
- Pour the batter into a greased plate and steam for 12-15 minutes until a toothpick inserted comes out clean.
- Once steamed, let the dhokla cool and then cut it into small square pieces.
- In a small pan, heat oil and add mustard seeds. When the seeds crackle, add sesame seeds, green chilies, and sauté for a few seconds.
- Pour this tempering over the cut dhokla pieces and toss gently to coat.
- Cut the mini burger buns in half and toast them with a little butter.
- Place a piece of tempered dhokla between the toasted buns to make sliders.
- Serve the Khaman Dhokla Sliders with green chutney or tamarind chutney.
