Ingredients
- 1 cup besan (gram flour)
- 1 cup yogurt
- 1 tsp turmeric powder
- 1 tsp ginger paste
- 1 tsp green chili paste
- Salt to taste
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp sesame seeds
- 8-10 curry leaves
- 1/4 cup grated coconut
- 1/4 cup chopped cilantro
- 4 large flour tortillas
- 1 cup shredded cheese
Instructions
- In a bowl, mix besan, yogurt, turmeric powder, ginger paste, green chili paste, and salt to make a smooth batter.
- Pour the batter into a non-stick pan and cook over low heat, stirring continuously, until it thickens.
- Spread the cooked batter thinly on a greased surface and let it cool. Cut into strips.
- Heat oil in a small pan and add mustard seeds, sesame seeds, and curry leaves. Pour this tempering over the khandvi strips.
- Sprinkle grated coconut and chopped cilantro over the khandvi strips.
- Place a flour tortilla on a heated pan, sprinkle cheese on one half, and arrange khandvi strips on top. Fold the tortilla in half and cook until the cheese melts and the tortilla turns golden brown.
- Repeat the process for the remaining tortillas.
- Serve the Khandvi Quesadilla Delight hot with your favorite salsa or chutney.
