Khandvi Quesadilla Delight

Ingredients

  • 1 cup besan (gram flour)
  • 1 cup yogurt
  • 1 tsp turmeric powder
  • 1 tsp ginger paste
  • 1 tsp green chili paste
  • Salt to taste
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp sesame seeds
  • 8-10 curry leaves
  • 1/4 cup grated coconut
  • 1/4 cup chopped cilantro
  • 4 large flour tortillas
  • 1 cup shredded cheese

Instructions

  1. In a bowl, mix besan, yogurt, turmeric powder, ginger paste, green chili paste, and salt to make a smooth batter.
  2. Pour the batter into a non-stick pan and cook over low heat, stirring continuously, until it thickens.
  3. Spread the cooked batter thinly on a greased surface and let it cool. Cut into strips.
  4. Heat oil in a small pan and add mustard seeds, sesame seeds, and curry leaves. Pour this tempering over the khandvi strips.
  5. Sprinkle grated coconut and chopped cilantro over the khandvi strips.
  6. Place a flour tortilla on a heated pan, sprinkle cheese on one half, and arrange khandvi strips on top. Fold the tortilla in half and cook until the cheese melts and the tortilla turns golden brown.
  7. Repeat the process for the remaining tortillas.
  8. Serve the Khandvi Quesadilla Delight hot with your favorite salsa or chutney.
