Ingredients

  • 1 cup besan (gram flour)
  • 1 cup yogurt
  • 1 tsp turmeric
  • 1 tsp ginger paste
  • 1 tsp green chili paste
  • Salt to taste
  • 2 cups water
  • 12 spring roll wrappers
  • 1 cup mixed vegetables (carrots, cabbage, bell peppers), julienned
  • Oil for frying
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix besan, yogurt, turmeric, ginger paste, green chili paste, and salt. Gradually add water to make a smooth batter.
  2. Pour the batter into a non-stick pan and cook over medium heat, stirring continuously, until it thickens and becomes a smooth paste.
  3. Spread the cooked batter thinly on a greased surface and let it cool. Cut into strips for filling the spring rolls.
  4. Place a spoonful of the khandvi filling and mixed vegetables on each spring roll wrapper and roll them tightly, sealing the edges with a paste of flour and water.
  5. Heat oil in a pan and fry the spring rolls until golden and crispy. Drain on paper towels to remove excess oil.
  6. In a small pan, heat some oil and add mustard seeds and sesame seeds. Once they splutter, pour the tempering over the fried spring rolls.
  7. Garnish with fresh cilantro and serve hot with your favorite dipping sauce.
