Ingredients
- 1 cup besan (gram flour)
- 1 cup yogurt
- 1 tsp turmeric
- 1 tsp ginger paste
- 1 tsp green chili paste
- Salt to taste
- 2 cups water
- 12 spring roll wrappers
- 1 cup mixed vegetables (carrots, cabbage, bell peppers), julienned
- Oil for frying
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- Fresh cilantro for garnish
Instructions
- In a bowl, mix besan, yogurt, turmeric, ginger paste, green chili paste, and salt. Gradually add water to make a smooth batter.
- Pour the batter into a non-stick pan and cook over medium heat, stirring continuously, until it thickens and becomes a smooth paste.
- Spread the cooked batter thinly on a greased surface and let it cool. Cut into strips for filling the spring rolls.
- Place a spoonful of the khandvi filling and mixed vegetables on each spring roll wrapper and roll them tightly, sealing the edges with a paste of flour and water.
- Heat oil in a pan and fry the spring rolls until golden and crispy. Drain on paper towels to remove excess oil.
- In a small pan, heat some oil and add mustard seeds and sesame seeds. Once they splutter, pour the tempering over the fried spring rolls.
- Garnish with fresh cilantro and serve hot with your favorite dipping sauce.
