Ingredients

  • 1 cup besan (gram flour)
  • 1 cup yogurt
  • 1 tsp turmeric powder
  • 1 tsp ginger paste
  • 1 tsp green chili paste
  • Salt to taste
  • 2 cups water
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, mix besan, yogurt, turmeric powder, ginger paste, green chili paste, and salt.
  2. Gradually add water to the mixture and whisk until smooth.
  3. Pour the mixture into a non-stick pan and cook over low heat, stirring continuously, until it thickens.
  4. Spread the cooked mixture thinly on a flat surface and let it cool.
  5. Cut the cooled mixture into strips and carefully roll each strip to form sushi-like rolls.
  6. In a small pan, heat oil and add mustard seeds and sesame seeds. Once they crackle, pour the tempering over the khandvi sushi rolls.
  7. Garnish with fresh coriander leaves and serve.
