Khao Niao Mamuang (mango Sticky Rice)
Khao Niao Mamuang, or Mango Sticky Rice, is a popular Thai dessert that combines the sweetness of ripe mangoes with the creamy texture of sticky rice. This delightful treat is often enjoyed during the summer months when mangoes are in season.
Ingredients
- 1 cup glutinous rice
- 1 1/2 cups coconut milk
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- Sesame seeds, for garnish
Instructions
- Rinse the glutinous rice until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the rice and place it in a steamer lined with cheesecloth. Steam for 20-25 minutes until the rice is tender.
- In a saucepan, combine the coconut milk, sugar, and salt. Cook over medium heat until the sugar is dissolved.
- Transfer the steamed rice to a bowl and pour half of the coconut milk mixture over the rice. Let it sit for 5 minutes to allow the rice to absorb the coconut milk.
- Peel and slice the mangoes.
- To serve, place a mound of sticky rice on a plate, arrange the mango slices alongside, and drizzle with the remaining coconut milk mixture. Sprinkle with sesame seeds.
