Khao Niao Mamuang (thai Sweet Sticky Rice With Mango)

Ingredients

  • 2 cups glutinous rice
  • 1 3/4 cups coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds for garnish (optional)

Instructions

  1. In a bowl, soak the glutinous rice in water for 4 hours or overnight.
  2. After soaking, drain the rice and steam it for 20 minutes or until tender.
  3. In a saucepan, combine the coconut milk, sugar, and salt. Cook over low heat, stirring constantly until the sugar is dissolved.
  4. Place the steamed rice in a large bowl and pour 3/4 of the coconut milk mixture over the rice. Stir to combine and let it sit for 30 minutes to allow the rice to absorb the coconut milk.
  5. To serve, mold a small cup of sticky rice on a plate and place the sliced mango on the side. Drizzle the remaining coconut milk mixture on top and sprinkle with sesame seeds if desired.
