Ingredients
- 2 cups glutinous rice
- 1 3/4 cups coconut milk
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 ripe mangoes, peeled and sliced
Instructions
- Rinse the glutinous rice until the water runs clear, then soak it in water for 4 hours or overnight.
- After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam for 25-30 minutes until the rice is tender.
- In a saucepan, combine the coconut milk, sugar, and salt. Cook over low heat, stirring constantly until the sugar is dissolved.
- Transfer the steamed rice to a bowl and pour half of the coconut milk mixture over the rice. Stir to coat the rice evenly and let it sit for 15 minutes.
- Peel and slice the mangoes.
- To serve, mold the sticky rice into small bowls or cups, then top with the remaining coconut milk mixture and sliced mangoes.
