Ingredients

  • 2-3 Thai bird's eye chilies, finely chopped
  • 1 cup mixed vegetables (bell peppers, carrots, peas)
  • 1 cup firm tofu, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 cup fresh basil leaves
  • Sliced cucumber and lime wedges for serving

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add minced garlic and chopped chilies, stir-fry for 30 seconds until fragrant.
  3. Add mixed vegetables and tofu, stir-fry for 2-3 minutes until vegetables are tender-crisp.
  4. Push the ingredients to one side of the wok, add a little more oil if needed, then add the chilled jasmine rice. Break up any clumps and stir-fry for 2-3 minutes.
  5. Stir in soy sauce, oyster sauce, and sugar. Mix well with the rice and other ingredients.
  6. Add fresh basil leaves and stir-fry for another minute until the basil is wilted.
  7. Remove from heat and serve the Khao Pad Krapow hot, garnished with sliced cucumber and lime wedges.
