Ingredients
- 2 cups cooked jasmine rice, chilled
- 200g crab meat, cooked and shredded
- 2 eggs, beaten
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/4 teaspoon ground white pepper
- 2 green onions, chopped
- Lime wedges for serving
Instructions
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
- Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the same wok.
- Add the minced garlic, diced onion, and diced bell pepper. Stir-fry for 2-3 minutes until the vegetables are tender.
- Add the chilled jasmine rice to the wok and stir-fry for 2-3 minutes, breaking up any clumps.
- Add the cooked crab meat, soy sauce, fish sauce, oyster sauce, sugar, and ground white pepper. Stir-fry for another 2-3 minutes until everything is well combined.
- Return the scrambled eggs to the wok and toss everything together.
- Add the chopped green onions and toss to combine.
- Transfer the Khao Pad Pu to serving plates and serve with lime wedges on the side.
