Khao Pad Pu (thai Fried Rice With Crab)

Ingredients

  • 2 cups cooked jasmine rice, chilled
  • 200g crab meat, cooked and shredded
  • 2 eggs, beaten
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • 2 green onions, chopped
  • Lime wedges for serving

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the same wok.
  4. Add the minced garlic, diced onion, and diced bell pepper. Stir-fry for 2-3 minutes until the vegetables are tender.
  5. Add the chilled jasmine rice to the wok and stir-fry for 2-3 minutes, breaking up any clumps.
  6. Add the cooked crab meat, soy sauce, fish sauce, oyster sauce, sugar, and ground white pepper. Stir-fry for another 2-3 minutes until everything is well combined.
  7. Return the scrambled eggs to the wok and toss everything together.
  8. Add the chopped green onions and toss to combine.
  9. Transfer the Khao Pad Pu to serving plates and serve with lime wedges on the side.
