Ingredients
- 3 cups cooked jasmine rice, chilled
- 1 cup fresh pineapple, diced
- 1/2 lb shrimp, peeled and deveined
- 2 eggs, beaten
- 1/2 cup onion, diced
- 1/2 cup red bell pepper, diced
- 3 cloves garlic, minced
- 3 tbsp vegetable oil
- 3 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp curry powder
- 1/2 cup cashews, chopped
- 2 green onions, chopped
Instructions
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the shrimp and cook until pink, then remove from the wok and set aside.
- Heat the remaining oil in the wok. Add the beaten eggs and scramble until cooked. Add the garlic, onion, and bell pepper, and stir-fry for 2-3 minutes.
- Add the chilled rice to the wok, breaking up any clumps. Stir in the fish sauce, soy sauce, and curry powder. Cook for 5-6 minutes, stirring constantly.
- Add the cooked shrimp, pineapple, and cashews to the wok. Stir to combine and cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped green onions before serving.
