Ingredients

  • 3 cups cooked jasmine rice, chilled
  • 1 cup fresh pineapple, diced
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1/2 cup onion, diced
  • 1/2 cup red bell pepper, diced
  • 3 cloves garlic, minced
  • 3 tbsp vegetable oil
  • 3 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp curry powder
  • 1/2 cup cashews, chopped
  • 2 green onions, chopped

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the shrimp and cook until pink, then remove from the wok and set aside.
  2. Heat the remaining oil in the wok. Add the beaten eggs and scramble until cooked. Add the garlic, onion, and bell pepper, and stir-fry for 2-3 minutes.
  3. Add the chilled rice to the wok, breaking up any clumps. Stir in the fish sauce, soy sauce, and curry powder. Cook for 5-6 minutes, stirring constantly.
  4. Add the cooked shrimp, pineapple, and cashews to the wok. Stir to combine and cook for an additional 2-3 minutes.
  5. Remove from heat and garnish with chopped green onions before serving.
