Khao Poon
Khao poon is a traditional Laotian dish that features a flavorful and aromatic coconut-based broth served with vermicelli noodles and an array of fresh herbs and vegetables.
Ingredients
- 1 can (14 oz) coconut milk
- 4 cups chicken or vegetable broth
- 2 lemongrass stalks, bruised
- 1 inch piece of galangal, sliced
- 3-4 kaffir lime leaves
- 2-3 red chilies, sliced
- 1 tbsp fish sauce
- 1 tbsp sugar
- 8 oz vermicelli noodles, cooked
- 1 cup bean sprouts
- 1 cup shredded cabbage
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1/4 cup sliced green onions
- Lime wedges for serving
Instructions
- In a large pot, combine the coconut milk, broth, lemongrass, galangal, kaffir lime leaves, and chilies. Bring to a simmer over medium heat and cook for 20 minutes.
- Stir in the fish sauce and sugar, then remove the lemongrass, galangal, and kaffir lime leaves from the broth.
- To serve, divide the cooked vermicelli noodles among serving bowls and ladle the hot broth over the noodles.
- Top each bowl with bean sprouts, shredded cabbage, cilantro, mint, and green onions. Serve with lime wedges.
