Ingredients

  • 1 can (14 oz) coconut milk
  • 4 cups chicken or vegetable broth
  • 2 lemongrass stalks, bruised
  • 1 inch piece of galangal, sliced
  • 3-4 kaffir lime leaves
  • 2-3 red chilies, sliced
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 8 oz vermicelli noodles, cooked
  • 1 cup bean sprouts
  • 1 cup shredded cabbage
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 1/4 cup sliced green onions
  • Lime wedges for serving

Instructions

  1. In a large pot, combine the coconut milk, broth, lemongrass, galangal, kaffir lime leaves, and chilies. Bring to a simmer over medium heat and cook for 20 minutes.
  2. Stir in the fish sauce and sugar, then remove the lemongrass, galangal, and kaffir lime leaves from the broth.
  3. To serve, divide the cooked vermicelli noodles among serving bowls and ladle the hot broth over the noodles.
  4. Top each bowl with bean sprouts, shredded cabbage, cilantro, mint, and green onions. Serve with lime wedges.
