Ingredients
- 1 pound chicken thighs, cut into bite-sized pieces
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 3 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon turmeric
- 8 oz egg noodles
- 1/4 cup vegetable oil
- 1/4 cup shallots, thinly sliced
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the red curry paste and cook for 1-2 minutes until fragrant.
- Add the chicken thighs to the pot and cook until browned on all sides.
- Pour in the coconut milk, chicken broth, soy sauce, fish sauce, brown sugar, and turmeric. Stir to combine and bring to a simmer.
- Cover the pot and let the soup simmer for 20-25 minutes, until the chicken is cooked through.
- Cook the egg noodles according to the package instructions. Drain and set aside.
- In a separate pan, heat the vegetable oil over medium-high heat. Fry the shallots until crispy and golden brown. Remove from the oil and drain on paper towels.
- Divide the cooked noodles among serving bowls. Ladle the coconut curry soup over the noodles.
- Top the soup with crispy fried shallots and chopped cilantro. Serve with lime wedges on the side.
