Khapse (tibetan Yak Butter Pancakes)
Khapse, also known as Tibetan Yak Butter Pancakes, are a traditional Tibetan snack often made during Losar, the Tibetan New Year. These crispy, deep-fried pastries are flavored with yak butter and are a popular treat during festive occasions.
Ingredients
- 3 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup yak butter, melted
- 1/2 cup milk
- Oil for deep frying
Instructions
- In a large bowl, mix the flour, sugar, and salt together.
- Add the melted yak butter and milk to the dry ingredients and knead the dough until smooth. Let it rest for 20 minutes.
- Roll out the dough on a floured surface to about 1/4 inch thickness. Cut the dough into strips and make decorative cuts in the center of each strip.
- Heat the oil in a deep pan over medium heat. Fry the dough strips in batches until golden brown and crispy.
- Remove the fried khapse from the oil and drain on paper towels. Let them cool before serving.
