Khapse, also known as Tibetan Yak Butter Pancakes, are a traditional Tibetan snack often made during Losar, the Tibetan New Year. These crispy, deep-fried pastries are flavored with yak butter and are a popular treat during festive occasions.

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup yak butter, melted
  • 1/2 cup milk
  • Oil for deep frying

Instructions

  1. In a large bowl, mix the flour, sugar, and salt together.
  2. Add the melted yak butter and milk to the dry ingredients and knead the dough until smooth. Let it rest for 20 minutes.
  3. Roll out the dough on a floured surface to about 1/4 inch thickness. Cut the dough into strips and make decorative cuts in the center of each strip.
  4. Heat the oil in a deep pan over medium heat. Fry the dough strips in batches until golden brown and crispy.
  5. Remove the fried khapse from the oil and drain on paper towels. Let them cool before serving.
