Kharoof (raja Roasted Lamb)

Ingredients

  • 1 leg of lamb, bone-in
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of ground cumin
  • 1 tablespoon of paprika
  • 1 teaspoon of ground coriander
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix together the minced garlic, olive oil, cumin, paprika, coriander, salt, and pepper to create a spice rub.
  3. Place the leg of lamb in a roasting pan and rub the spice mixture all over the lamb, ensuring it is evenly coated.
  4. Cover the roasting pan with foil and roast in the preheated oven for 1.5 hours.
  5. Remove the foil and continue roasting for another 30 minutes, or until the lamb is cooked to your desired level of doneness.
  6. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before carving and serving.
