Kharoof (Raja Roasted Lamb) is a traditional South Sudanese dish that is perfect for special occasions and gatherings. The succulent roasted lamb is seasoned with a blend of aromatic spices, creating a rich and flavorful dish that is sure to impress.
Ingredients
- 1 leg of lamb, bone-in
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of ground cumin
- 1 tablespoon of paprika
- 1 teaspoon of ground coriander
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- In a small bowl, mix together the minced garlic, olive oil, cumin, paprika, coriander, salt, and pepper to create a spice rub.
- Place the leg of lamb in a roasting pan and rub the spice mixture all over the lamb, ensuring it is evenly coated.
- Cover the roasting pan with foil and roast in the preheated oven for 1.5 hours.
- Remove the foil and continue roasting for another 30 minutes, or until the lamb is cooked to your desired level of doneness.
- Once cooked, remove the lamb from the oven and let it rest for 10 minutes before carving and serving.
