Ingredients

  • 1 lb lamb, cut into chunks

  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Stir in the diced tomatoes, tomato paste, cumin, coriander, and cinnamon. Cook for a few minutes to allow the flavors to meld.
  4. Drain the soaked chickpeas and add them to the pot. Pour in the chicken or vegetable broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender and the chickpeas are cooked through.
