Ingredients
- 1.5 lbs lamb, cut into cubes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 cup pitted dates
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, coriander, cinnamon, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the lamb cubes to the pot and brown on all sides.
- Pour in the chicken broth and add the pitted dates. Season with salt and pepper.
- Bring the curry to a simmer, then reduce the heat and let it cook for 1 hour, stirring occasionally, until the lamb is tender and the sauce has thickened.
- Serve the Kharuf hot with rice or flatbread.
