Ingredients

  • 1.5 lbs lamb, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup pitted dates
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, coriander, cinnamon, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Add the lamb cubes to the pot and brown on all sides.
  4. Pour in the chicken broth and add the pitted dates. Season with salt and pepper.
  5. Bring the curry to a simmer, then reduce the heat and let it cook for 1 hour, stirring occasionally, until the lamb is tender and the sauce has thickened.
  6. Serve the Kharuf hot with rice or flatbread.
