Ingredients

  • 1.5 lbs beef, cubed
  • 3 large potatoes, peeled and cubed

  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the tomato paste, paprika, cumin, salt, and pepper.
  4. Pour in the beef broth and red wine, if using, and bring to a simmer.
  5. Add the potatoes, carrots, tomatoes, and bell pepper to the pot.
  6. Cover and cook for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  7. Garnish with fresh parsley before serving.
