Ingredients
- 1.5 lbs beef, cubed
- 3 large potatoes, peeled and cubed
- 2 carrots, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onions and garlic, and cook until softened.
- Stir in the tomato paste, paprika, cumin, salt, and pepper.
- Pour in the beef broth and red wine, if using, and bring to a simmer.
- Add the potatoes, carrots, tomatoes, and bell pepper to the pot.
- Cover and cook for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
- Garnish with fresh parsley before serving.
