Kheer

Kheer is a traditional rice pudding from the Indian subcontinent, made by boiling rice, milk, and sugar. It is flavored with cardamom, saffron, and garnished with nuts.

Ingredients

  • 1/2 cup basmati rice
  • 1 liter whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands
  • 2 tablespoons chopped nuts (almonds, pistachios, cashews)

Instructions

  1. Wash the rice and soak it for 30 minutes.
  2. In a heavy-bottomed pan, bring the milk to a boil.
  3. Drain the rice and add it to the boiling milk. Simmer on low heat, stirring occasionally, until the rice is cooked and the mixture thickens.
  4. Add sugar, cardamom powder, and saffron. Cook for another 5-10 minutes.
  5. Remove from heat and let it cool. Garnish with chopped nuts.
