Kheer
Kheer is a traditional rice pudding from the Indian subcontinent, made by boiling rice, milk, and sugar. It is flavored with cardamom, saffron, and garnished with nuts.
Ingredients
- 1/2 cup basmati rice
- 1 liter whole milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands
- 2 tablespoons chopped nuts (almonds, pistachios, cashews)
Instructions
- Wash the rice and soak it for 30 minutes.
- In a heavy-bottomed pan, bring the milk to a boil.
- Drain the rice and add it to the boiling milk. Simmer on low heat, stirring occasionally, until the rice is cooked and the mixture thickens.
- Add sugar, cardamom powder, and saffron. Cook for another 5-10 minutes.
- Remove from heat and let it cool. Garnish with chopped nuts.
