Ingredients

  • 1 cup basmati rice
  • 4 cups coconut milk
  • 1 cup sugar
  • 1/4 cup chopped nuts (cashews, almonds, pistachios)
  • 1/4 tsp cardamom powder
  • 2 tbsp raisins

Instructions

  1. Wash the rice and soak it in water for 15 minutes. Drain the water and set aside.
  2. In a large pot, bring the coconut milk to a gentle boil over medium heat.
  3. Add the soaked rice to the boiling coconut milk and stir well. Cook on low heat, stirring occasionally, until the rice is fully cooked and the mixture thickens.
  4. Once the rice is cooked, add sugar, chopped nuts, cardamom powder, and raisins. Stir well and cook for an additional 5-7 minutes.
  5. Remove from heat and let the kheer cool to room temperature. It will thicken further as it cools.
  6. Refrigerate the kheer for at least 2 hours before serving. Garnish with more nuts and serve chilled.
