Kheer (coconut Milk Payasam)
Kheer, also known as Coconut Milk Payasam, is a traditional South Indian dessert that is creamy, aromatic, and full of rich flavors. This sweet dish is often prepared during festivals, special occasions, and family gatherings.
Ingredients
- 1 cup basmati rice
- 4 cups coconut milk
- 1 cup sugar
- 1/4 cup chopped nuts (cashews, almonds, pistachios)
- 1/4 tsp cardamom powder
- 2 tbsp raisins
Instructions
- Wash the rice and soak it in water for 15 minutes. Drain the water and set aside.
- In a large pot, bring the coconut milk to a gentle boil over medium heat.
- Add the soaked rice to the boiling coconut milk and stir well. Cook on low heat, stirring occasionally, until the rice is fully cooked and the mixture thickens.
- Once the rice is cooked, add sugar, chopped nuts, cardamom powder, and raisins. Stir well and cook for an additional 5-7 minutes.
- Remove from heat and let the kheer cool to room temperature. It will thicken further as it cools.
- Refrigerate the kheer for at least 2 hours before serving. Garnish with more nuts and serve chilled.
