Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped pistachios
  • 1 tablespoon golden raisins

Instructions

  1. Rinse the basmati rice under cold water and drain.
  2. In a large pot, bring the milk to a boil over medium heat.
  3. Add the rice to the boiling milk and reduce the heat to low. Simmer for 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
  4. Stir in the sugar, cardamom, and cinnamon. Cook for an additional 5 minutes.
  5. Remove the pot from the heat and let the kheer cool to room temperature.
  6. Once cooled, stir in the chopped almonds, pistachios, and golden raisins.
  7. Refrigerate the kheer for at least 2 hours before serving.
