Kheer (fragrant Cinnamon Rice Pudding)
Kheer is a fragrant and creamy rice pudding that is popular in Navyath Muslim Cuisine. It is a delightful dessert that is often served during special occasions and celebrations.
Ingredients
- 1/2 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cinnamon
- 2 tablespoons chopped almonds
- 2 tablespoons chopped pistachios
- 1 tablespoon golden raisins
Instructions
- Rinse the basmati rice under cold water and drain.
- In a large pot, bring the milk to a boil over medium heat.
- Add the rice to the boiling milk and reduce the heat to low. Simmer for 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
- Stir in the sugar, cardamom, and cinnamon. Cook for an additional 5 minutes.
- Remove the pot from the heat and let the kheer cool to room temperature.
- Once cooled, stir in the chopped almonds, pistachios, and golden raisins.
- Refrigerate the kheer for at least 2 hours before serving.
