Kheer (sweet Kheer)
Kheer, also known as Sweet Kheer, is a traditional Indian rice pudding that is often served as a dessert during festivals and special occasions.
Ingredients
- 1 liter whole milk
- 1/2 cup basmati rice, rinsed
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 10-12 strands of saffron
- 2 tablespoons chopped nuts (almonds, cashews, pistachios)
Instructions
- In a heavy-bottomed pan, bring the milk to a boil over medium heat.
- Add the rinsed basmati rice to the boiling milk and reduce the heat to low. Let it simmer for 25-30 minutes, stirring occasionally, until the rice is cooked and the mixture thickens.
- Once the rice is cooked, add sugar, cardamom powder, saffron, and chopped nuts. Stir well and cook for another 5 minutes.
- Remove the kheer from the heat and let it cool to room temperature. It will thicken further as it cools.
- Refrigerate the kheer for a few hours before serving. Garnish with more chopped nuts before serving, if desired.
