Kheer, also known as Sweet Kheer, is a traditional Indian rice pudding that is often served as a dessert during festivals and special occasions.

Ingredients

  • 1 liter whole milk
  • 1/2 cup basmati rice, rinsed
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 10-12 strands of saffron
  • 2 tablespoons chopped nuts (almonds, cashews, pistachios)

Instructions

  1. In a heavy-bottomed pan, bring the milk to a boil over medium heat.
  2. Add the rinsed basmati rice to the boiling milk and reduce the heat to low. Let it simmer for 25-30 minutes, stirring occasionally, until the rice is cooked and the mixture thickens.
  3. Once the rice is cooked, add sugar, cardamom powder, saffron, and chopped nuts. Stir well and cook for another 5 minutes.
  4. Remove the kheer from the heat and let it cool to room temperature. It will thicken further as it cools.
  5. Refrigerate the kheer for a few hours before serving. Garnish with more chopped nuts before serving, if desired.
