Khinkali (circassian Style Beef Dumplings)

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 20 dumpling wrappers

Instructions

  1. In a large mixing bowl, combine the ground beef, onion, garlic, parsley, cilantro, coriander, cumin, paprika, cayenne pepper, salt, and pepper. Mix well.
  2. Place a small spoonful of the beef mixture in the center of each dumpling wrapper.
  3. Moisten the edges of the wrapper with water, then fold and pleat the edges together to seal the dumpling.
  4. Bring a large pot of water to a boil. Carefully add the dumplings to the boiling water and cook for about 8-10 minutes, or until they float to the surface and the meat is cooked through.
  5. Remove the dumplings with a slotted spoon and serve hot with sour cream or your favorite dipping sauce.
