Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground fenugreek
  • 1/4 teaspoon ground paprika
  • 1/4 teaspoon ground chili powder
  • 1/4 teaspoon ground saffron (optional)
  • 1 cup warm water

Instructions

  1. In a large bowl, combine the flour, yeast, sugar, salt, and all the ground spices.
  2. Add the warm water and mix until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes, or until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  5. Divide the dough into 8 equal pieces and shape each piece into a ball.
  6. Flatten each ball into a 1/4-inch thick round disc.
  7. Heat a non-stick skillet over medium heat and cook each flatbread for 2-3 minutes on each side, or until golden brown and cooked through.
  8. Transfer the cooked flatbreads to a plate and cover with a towel to keep warm until ready to serve.
