Ingredients

  • 2 lbs pork trotters
  • 2 lbs chicken wings
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 bay leaves
  • 10 black peppercorns
  • 1 bunch parsley
  • 1 bunch dill
  • 1 garlic clove, minced
  • 1 packet unflavored gelatin
  • Salt to taste

Instructions

  1. In a large pot, combine the pork trotters, chicken wings, onion, carrots, bay leaves, and peppercorns. Cover with water and bring to a boil. Reduce heat and simmer for 3 hours, skimming off any foam that rises to the surface.
  2. Add the parsley and dill to the pot and continue to simmer for another hour.
  3. Remove the meat and strain the broth. Discard the vegetables and herbs.
  4. Shred the meat and place it in a mold.
  5. In a separate bowl, mix the garlic and gelatin with a cup of the strained broth. Pour this mixture over the meat in the mold.
  6. Refrigerate the kholodets for at least 6 hours, or until set.
  7. Unmold the kholodets onto a serving platter and slice before serving.
