Kholodets Extravaganza
Kholodets Extravaganza is a traditional Russian dish that is perfect for special occasions and gatherings. This jellied meat dish is a labor of love, but the result is a show-stopping centerpiece that will impress your guests.
Ingredients
- 2 lbs pork trotters
- 2 lbs chicken wings
- 1 onion, chopped
- 2 carrots, chopped
- 2 bay leaves
- 10 black peppercorns
- 1 bunch parsley
- 1 bunch dill
- 1 garlic clove, minced
- 1 packet unflavored gelatin
- Salt to taste
Instructions
- In a large pot, combine the pork trotters, chicken wings, onion, carrots, bay leaves, and peppercorns. Cover with water and bring to a boil. Reduce heat and simmer for 3 hours, skimming off any foam that rises to the surface.
- Add the parsley and dill to the pot and continue to simmer for another hour.
- Remove the meat and strain the broth. Discard the vegetables and herbs.
- Shred the meat and place it in a mold.
- In a separate bowl, mix the garlic and gelatin with a cup of the strained broth. Pour this mixture over the meat in the mold.
- Refrigerate the kholodets for at least 6 hours, or until set.
- Unmold the kholodets onto a serving platter and slice before serving.
