Kholodets Kudos

Ingredients

  • 2 lbs pork trotters
  • 1 lb pork ribs
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 1/2 cup vinegar
  • 6 cups water
  • 1 tsp salt

Instructions

  1. In a large pot, combine the pork trotters, pork ribs, onion, garlic, bay leaves, peppercorns, vinegar, and water.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 3 hours, skimming off any foam that rises to the surface.
  3. Add the salt and continue to simmer for another hour, or until the meat is very tender.
  4. Remove the meat from the pot and strain the broth, discarding the solids.
  5. Pour the broth into a mold and refrigerate until set, at least 6 hours or overnight.
  6. Serve the kholodets sliced, with mustard and horseradish on the side.
