Kholodets Kudos
Kholodets Kudos is a traditional Ukrainian dish that is perfect for special occasions and gatherings. This savory meat jelly is a true delicacy that requires time and patience to prepare, but the end result is well worth the effort.
Ingredients
- 2 lbs pork trotters
- 1 lb pork ribs
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 bay leaves
- 1 tsp black peppercorns
- 1/2 cup vinegar
- 6 cups water
- 1 tsp salt
Instructions
- In a large pot, combine the pork trotters, pork ribs, onion, garlic, bay leaves, peppercorns, vinegar, and water.
- Bring the mixture to a boil, then reduce the heat and simmer for 3 hours, skimming off any foam that rises to the surface.
- Add the salt and continue to simmer for another hour, or until the meat is very tender.
- Remove the meat from the pot and strain the broth, discarding the solids.
- Pour the broth into a mold and refrigerate until set, at least 6 hours or overnight.
- Serve the kholodets sliced, with mustard and horseradish on the side.
