Khorika Mankho (assamese Style Pork Curry)

Ingredients

  • 500g pork, cut into cubes
  • 2 onions, finely chopped
  • 3-4 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 2 tomatoes, finely chopped
  • 2-3 tbsp mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
  2. Add the ginger-garlic paste and green chilies. Cook for a few minutes.
  3. Add the pork cubes and cook until they are browned on all sides.
  4. Stir in the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.
  5. Add the chopped tomatoes and cook until they turn soft and the oil separates.
  6. Pour in 2 cups of water, cover the pan, and let the pork simmer until tender.
  7. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
