Khorika Mankho (assamese Style Pork Curry)
Khorika Mankho is a traditional pork curry from Assamese cuisine that is known for its rich and aromatic flavors. This dish is a perfect blend of spices and tender pork, making it a favorite among pork lovers.
Ingredients
- 500g pork, cut into cubes
- 2 onions, finely chopped
- 3-4 green chilies, slit
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 tomatoes, finely chopped
- 2-3 tbsp mustard oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
- Add the ginger-garlic paste and green chilies. Cook for a few minutes.
- Add the pork cubes and cook until they are browned on all sides.
- Stir in the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.
- Add the chopped tomatoes and cook until they turn soft and the oil separates.
- Pour in 2 cups of water, cover the pan, and let the pork simmer until tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
