Khorika Tenga (assamese Style Pork Soup)

Ingredients

  • 500g pork, cut into pieces
  • 2 tomatoes, chopped
  • 2 potatoes, diced
  • 1 onion, sliced
  • 2-3 green chilies, slit
  • 1-inch ginger, grated
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon mustard oil
  • Salt to taste
  • Water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pot and add the sliced onion. Sauté until golden brown.
  2. Add the pork pieces and cook until they are slightly browned.
  3. Stir in the grated ginger, turmeric powder, and salt. Cook for a few minutes.
  4. Add the chopped tomatoes, diced potatoes, and slit green chilies. Cook for 5-7 minutes.
  5. Pour in enough water to cover the ingredients and bring to a boil. Then, reduce the heat and let it simmer for about 45 minutes or until the pork is tender.
  6. Garnish with fresh coriander leaves and serve hot.
