Khorika Tenga is a traditional pork stew from the Assamese cuisine, known for its rich and tangy flavors. This hearty dish is a perfect combination of tender pork, aromatic spices, and refreshing sourness from the use of tomatoes and lemon.

Khorika Tenga (assamese Style Pork Stew)

Ingredients

  • 500g pork, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 2 green chilies, slit
  • 1-inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons mustard oil
  • 1 lemon, juiced
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
  2. Add the grated ginger and minced garlic. Sauté for a few minutes.
  3. Now, add the pork cubes and cook until they are browned on all sides.
  4. Stir in the turmeric, cumin, coriander, and red chili powders. Mix well.
  5. Add the chopped tomatoes and green chilies. Cook until the tomatoes are soft and the oil separates.
  6. Pour in 3 cups of water, cover the pan, and let the stew simmer for about 45-50 minutes or until the pork is tender.
  7. Once the pork is cooked, squeeze the lemon juice into the stew and give it a good stir.
  8. Garnish with fresh coriander leaves and serve hot with steamed rice.
