Khorisa Bhaja (bamboo Shoot Fry)

Ingredients

  • 500g fresh bamboo shoots, thinly sliced
  • 2 tbsp mustard oil
  • 1 tsp panch phoron (Bengali five-spice blend)
  • 2-3 green chilies, slit lengthwise
  • 1/2 tsp turmeric powder
  • Salt to taste

Instructions

  1. Heat mustard oil in a pan over medium heat.
  2. Add panch phoron and let it splutter.
  3. Add the sliced bamboo shoots and green chilies. Stir well.
  4. Sprinkle turmeric powder and salt. Mix everything together.
  5. Cover and cook for 10-12 minutes, stirring occasionally, until the bamboo shoots are tender.
  6. Uncover and cook for another 3-5 minutes until the excess moisture evaporates and the bamboo shoots are slightly crispy.
  7. Remove from heat and serve hot with steamed rice.
