Khorisa Bhaja (bamboo Shoot Fry)
Khorisa Bhaja, also known as Bamboo Shoot Fry, is a popular dish from Assamese Cuisine. It is a simple yet flavorful dish that is often enjoyed with steamed rice.
Ingredients
- 500g fresh bamboo shoots, thinly sliced
- 2 tbsp mustard oil
- 1 tsp panch phoron (Bengali five-spice blend)
- 2-3 green chilies, slit lengthwise
- 1/2 tsp turmeric powder
- Salt to taste
Instructions
- Heat mustard oil in a pan over medium heat.
- Add panch phoron and let it splutter.
- Add the sliced bamboo shoots and green chilies. Stir well.
- Sprinkle turmeric powder and salt. Mix everything together.
- Cover and cook for 10-12 minutes, stirring occasionally, until the bamboo shoots are tender.
- Uncover and cook for another 3-5 minutes until the excess moisture evaporates and the bamboo shoots are slightly crispy.
- Remove from heat and serve hot with steamed rice.
