Khorisa Murgi Curry (assamese Style Pork Curry With Bamboo Shoots)
Khorisa Murgi Curry is a traditional dish from the North East Indian state of Assam. This flavorful curry combines tender pork with the unique taste of bamboo shoots, creating a delicious and aromatic dish that is perfect for a hearty meal.
Ingredients
- 500g pork, cut into cubes
- 1 cup bamboo shoots, sliced
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp mustard oil
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
- Add the ginger-garlic paste and green chilies. Sauté for a few minutes.
- Add the pork cubes and cook until they are browned on all sides.
- Stir in the tomato puree, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook for 5 minutes.
- Add the sliced bamboo shoots and mix well. Cover and cook for 30-40 minutes until the pork is tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
