Khorkhog: Traditional Mongolian BBQ (Хорхог)
Хорхог (Khorkhog) is a traditional Mongolian BBQ dish that is cooked using hot stones. This unique cooking method gives the meat a smoky flavor and tender texture, making it a favorite among Mongolian nomads.
Ingredients
- 1 kg lamb or goat meat, cut into chunks
- 10-15 river stones
- 1 large onion, sliced
- 5-6 potatoes, peeled and halved
- 5 carrots, peeled and cut into chunks
- Salt and pepper to taste
- Water
Instructions
- Prepare the river stones by washing them thoroughly to remove any dirt or debris.
- In a large pot, layer the meat, onion, potatoes, and carrots, seasoning each layer with salt and pepper.
- Add the washed river stones on top of the layered ingredients.
- Pour enough water into the pot to cover the ingredients.
- Cover the pot and place it on the stovetop over medium heat. Let it cook for 2 hours, adding more water if needed.
- Once the meat is tender and the vegetables are cooked, carefully remove the hot stones from the pot.
- Transfer the cooked meat and vegetables to a large serving platter and serve hot.
