Ingredients

  • 8 lamb chops
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, paprika, cumin, salt, and pepper to create the marinade.
  2. Place the lamb chops in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chops. Refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill for medium-high heat and lightly oil the grate.
  4. Remove the lamb chops from the marinade and discard the excess marinade.
  5. Grill the chops on the preheated grill until they are cooked to your desired doneness, about 6 minutes per side for medium-rare.
  6. Remove from the grill and let the chops rest for a few minutes before serving.
