Ingredients

  • 1 small pumpkin, peeled and diced

  • 1/2 tsp ground nutmeg
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced pumpkin, ground cinnamon, and ground nutmeg to the pot, and stir to combine.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let the soup simmer for 20-25 minutes, or until the pumpkin is tender.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  7. Season the soup with salt and pepper to taste.
  8. Serve the Armenian Pumpkin Soup hot, garnished with a sprinkle of ground cinnamon if desired.
