Khorovats (armenian Pumpkin Soup)
Khorovats, also known as Armenian Pumpkin Soup, is a hearty and comforting dish that is perfect for the fall season. This soup is packed with warm spices and the natural sweetness of pumpkin, making it a delicious and nutritious meal for the whole family.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced pumpkin, ground cinnamon, and ground nutmeg to the pot, and stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the soup simmer for 20-25 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Season the soup with salt and pepper to taste.
- Serve the Armenian Pumpkin Soup hot, garnished with a sprinkle of ground cinnamon if desired.
