Kiam Chye Ark Soup Fiesta

Ingredients

  • 1 duck, cut into pieces
  • 200g salted mustard greens (kiam chye)
  • 4 tomatoes, quartered
  • 1.5L water
  • 3 cloves garlic, minced
  • 1-inch ginger, sliced
  • 2 tbsp preserved plums
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Soak the salted mustard greens in water for 30 minutes, then rinse and drain. Cut into smaller pieces.
  2. In a large pot, bring the water to a boil. Add the duck pieces and boil for 5 minutes. Remove the duck, discard the water, and rinse the duck under cold water.
  3. Heat sesame oil in the pot over medium heat. Add garlic and ginger, and sauté until fragrant.
  4. Add the preserved plums, salted mustard greens, and tomatoes. Stir well.
  5. Return the duck to the pot and add 1.5L of water. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  6. Season with salt and pepper to taste. Serve hot.
