Kiam Chye Ark Soup Fiesta
Kiam Chye Ark Soup Fiesta is a traditional Singaporean soup that is bursting with flavor. This hearty and comforting soup is perfect for any occasion, especially during the cooler months.
Ingredients
- 1 duck, cut into pieces
- 200g salted mustard greens (kiam chye)
- 4 tomatoes, quartered
- 1.5L water
- 3 cloves garlic, minced
- 1-inch ginger, sliced
- 2 tbsp preserved plums
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Soak the salted mustard greens in water for 30 minutes, then rinse and drain. Cut into smaller pieces.
- In a large pot, bring the water to a boil. Add the duck pieces and boil for 5 minutes. Remove the duck, discard the water, and rinse the duck under cold water.
- Heat sesame oil in the pot over medium heat. Add garlic and ginger, and sauté until fragrant.
- Add the preserved plums, salted mustard greens, and tomatoes. Stir well.
- Return the duck to the pot and add 1.5L of water. Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Season with salt and pepper to taste. Serve hot.
